At a fish restaurant, ordering may begin with a menu, a fish display or a staff suggestion for the day. Each can lead to an enjoyable meal if you take time before the final decision. First choose the experience: a whole fish to share, an individual plate each or a few seafood starters to taste. Then understand the species, weight and cooking method before the fish goes to the kitchen.

🌊 The name starts the conversation
Turkish menus include levrek (sea bass), hamsi (anchovy), sardalya (sardine) and palamut (bonito). These fish differ in size, texture and presentation, so do not treat them as interchangeable versions of “grilled fish”. Ask which are available, which suit your preferred cooking method and whether they come whole, in pieces or as fillets.

The selection changes with supply, season and location, so an old photograph does not guarantee a particular species. If origin matters to you, ask whether the fish is wild-caught or farmed and how the restaurant describes it. A seaside table does not answer that question, and neither size nor a display on ice alone guarantees quality.

⚖️ Portions, kilograms and whole fish
The key question is the pricing unit. Porsiyon means a portion, kilogram means a kilogram, and a whole fish may have a set price. The dish name alone does not explain this. For a weight-based charge, ask for the chosen fish’s weight and expected total, and clarify whether the charged weight is before or after cleaning.

Imagine a fish advertised as weighing 800 g. This hypothetical purchase weight includes the parts explained by the restaurant; it is not a promise of 800 g of edible flesh. The head, bones and cooking affect what you actually eat. Ask what serving size suits two people given your starters and appetites, then agree on the particular fish rather than a general description such as “a large fish”.

🍳 Choose the cooking method you want to try
Menu termWhat to expectWhat to ask
Izgara — grilledFish flavour with the character of grillingWhole or filleted? What seasoning?
Tava — pan-cookedPan preparation, which may involve fryingIs there flour or a coating?
Fırında — oven-cookedFish cooked in the ovenWhich vegetables or sauce accompany it?
Fileto — filletPieces of fish fleshHas the kitchen checked for bones?

Fillets may make sharing easier, but do not guarantee that every bone is gone. If you want to appreciate the fish itself, ask for a simple description of the seasoning and sauce on the side if possible. For salt-baked fish or a theatrical presentation, ask how it is prepared and the full cost before agreeing. Its appeal may lie in the cooking, the spectacle or both.

🥗 Starters need not become a second dinner
Some venues serve small meze dishes before the fish, followed by ara sıcak, or hot starters. Seafood starters are not necessarily light, and not every plate on a display tray is included with the fish. Choose a limited number and ask about ingredients and prices, leaving room for the main attraction.

For grilled fish, a vegetable starter or salad can provide a contrasting texture rather than repeating three fried dishes. If you choose a hot seafood starter, decide whether it is a tasting dish or replaces part of the main meal. Focus on what you will actually eat; varied dish names do not mean you need them all on the table.

🧾 Confirm the order in one clear sentence
Before preparation, repeat what you chose: this fish, at this agreed weight, cooked this way, with these starters and drinks. Ask whether cleaning, cooking or special presentation is included in the quoted price and which accompaniments come with it. Clarifying the details before food is served helps you relax during the meal.

If everyone wants a different fish, separate portions may suit you better than a large shared one. For sharing, ask for extra plates and whether staff can remove the flesh from the bones at the table. This service is not available everywhere; asking early helps you choose a presentation that suits the group.

👨‍👩‍👧 Fish for children and a varied group
For a child, choose a presentation you can manage easily, ask staff to check the bones carefully, then inspect each mouthful yourself before serving it. Do not rely on “fillet” as a guarantee. Request sauce or strong seasoning separately if possible so the child can try the fish before adding a flavour they might dislike.

Fish and shellfish are different foods when discussing allergies. Name what the person needs to avoid and ask about ingredients and preparation. If someone does not eat seafood, check alternatives before booking rather than assuming a fish restaurant offers a suitable main. Also check the venue’s atmosphere, music and drinks to suit your family.

🗣️ Questions to remember before viewing the display
🐟 Bugün hangi balıklar var? — Which fish are available today?
⚖️ Fiyat porsiyon için mi, kilo için mi? — Is the price per portion or per kilogram?
💰 Bu balığın toplam fiyatı ne kadar? — What is the total price for this fish?
🍳 Izgara yapılabilir mi? — Can it be grilled?
🦴 Kılçıkları ayıklayabilir misiniz? — Could you remove the bones?

🌅 A relaxed example of a memorable meal
Two people arrive, choose their table and read the display and menu before selecting starters. They agree on the fish, weight and cooking, then choose a starter and salad to suit their appetites. They enjoy the scene while waiting and taste the fish before the sauce when it arrives. They choose drinks and dessert clearly when wanted.

This approach helps you remember the differences between a small fried fish, a grilled piece and a whole oven-cooked fish. Seafood in Türkiye is varied; begin by understanding what you ordered, then give each type room to reveal its texture and flavour.
