Food in Kars opens a different door to Eastern Anatolia: cheese worth tasting slowly, honey to try without too many additions, and a hot goose or dough dish to end a day of exploring. Understanding each stop makes the experience rewarding. A cheese shop introduces products, a restaurant gives a cooked dish its moment, and a café lets you reflect at leisure. You do not need a large box of purchases or a long spread to get to know the city. Sometimes comparing two bites creates a sharper memory than ordering many dishes.

🧀 Begin by Tasting Cheese rather than Buying Quickly

Kars Kaşarı is one of Kars’s best-known products. Other cheeses include Gravyer, Çeçil and Tuluk. Ask the seller to name each piece and explain its maturation and storage. Try each on its own first, then with plain bread. If honey, olives and cheese all enter the first bite, it is harder to know which flavour you actually enjoyed.

If offered two cheeses with similar names, ask about the difference that matters to your choice: is one fresh and the other aged? Does the milk or texture differ? Do not assume the strongest flavour suits everyone, or the highest price makes it best for your planned breakfast. You may want something easy to serve to children while someone else wants a more concentrated flavour with tea. Small quantities of two clearly identified varieties can be more enjoyable than a large amount you do not know how to use.

🪿 Goose: A Dish with Its Own Season and Arrangements

Goose, or Kaz, has a recognised place in Kars cuisine, particularly on winter tables. Check availability before planning lunch around it, and ask whether it comes as an individual portion or a sharing dish. The name does not explain the cut or how many people it will feed, so request a clear description of the accompaniments and presentation before deciding.

For a first experience, focus on a portion you can comfortably taste, leaving extras until it arrives. Try a bite of meat alone, then with the accompaniments, and do not expect it to feel just like the chicken you know. Where family tastes differ, choose another clearly understood dish alongside goose instead of requiring everyone to try the same thing. A different option keeps discovery enjoyable and lets each person choose how much they want.

🍽️ Hangel: A Different Way to Enjoy Dough

Hangel in the Kars description consists of boiled squares of dough topped with garlic yoghurt and onion browned in butter. It offers a different experience from cheese or meat: dough forms the foundation, with the sauce providing contrast. Ask about the portion; a simple-looking bowl may be a meal in its own right, rather than a small side to add to a rich lunch.

For sharing, request small plates and suitable spoons before the food arrives. If someone dislikes garlic, ask whether the yoghurt or sauce can be served separately. Preparation may or may not allow this, so explain early. Hangel can also be a different meal on a second day rather than an automatic accompaniment to goose.

🍯 Honey: Give It a Bite of Its Own

Kars is also known for honey. When tasting is offered, try a little on its own, then with bread or your chosen cheese. This helps identify what you enjoy without relying only on the seller’s description. If buying, ask about the product, container, weight and storage. Compare specific products rather than the word “honey” with the same word on another jar.

Tasting need not become a commitment to buy; take time to read the label and understand what you are getting. For a gift, a small, securely sealed container may be easier than a large one that needs repacking. Work out what you can carry and use after returning, especially on a journey with several stops.

🏡 Boğatepe: A Stop Requiring Its Own Plan

The official Kars guide mentions the Cheese Museum in the village of Boğatepe. If you want to connect food with its production story, check visiting arrangements and transport before including it. The village is not an extension of the breakfast table in the city centre. Allow time to suit the distance and your plans, and ask the provider which activities are actually available instead of expecting a tasting or production demonstration simply because you have arrived.

On a tight schedule, a cheese shop within your existing route may suffice; save the village for a longer visit. A successful route depends on what you understood and tasted without rushing, rather than how many stops you made. With children, include travel and breaks in your calculations and explain the visit’s purpose before setting off.

☕ Make the Café Part of the Walk

After a main meal, choose a café for a short rest or longer conversation as needed. Check indoor seating, ventilation and the drinks menu, and ask which baked item is available if you want something with tea. One regional pastry is Kete; check its filling and size. A shared piece after lunch may be enough instead of one for every person.

Avoid placing the cheese shop and café immediately after each other without a gap. Leave time to walk and regain an appetite for tasting, and keep a short note about the cheese you enjoyed. If you buy it later, you will have a clear name instead of trying to remember the piece on the left of the tray.

🧭 A Balanced Day of Tasting

Begin with a breakfast that lets you try a little cheese and honey, then set off on your chosen outing. Have goose for lunch after confirming availability and portion size, or hangel if you prefer dough. Allow an afternoon tea break, then return to buy the product you enjoyed once you know its name and storage needs. If adding Boğatepe, give it a day or a separate part of the day instead of squeezing everything between two meals. You will remember Kars through contrasting dishes, questions that made your choices clear, and bites you gave enough time to enjoy.
