You may arrive in Burdur for Salda or the ruins of Sagalassos, then discover that food deserves a planned stop. The table offers something different from resort dining: skewered köfte, walnut sweets to take home, and dishes that change as you move from the centre to Yeşilova or Gölhisar. Make the meal part of the route to see a quieter side of the province, closer to everyday life.
| Option | The experience | Before ordering |
| Burdur şiş | Köfte cooked on skewers | Ask about portion size |
| Yeşilova toast | A shorter meal during a visit | Check the filling |
| Ceviz ezmesi | A sweet and a gift | Taste before buying |
Burdur Şiş Köfte is minced meat shaped around skewers and served with thin bread. Local culinary descriptions mention meats such as goat and beef, so ask which the establishment uses instead of assuming every restaurant follows an identical recipe.
Burdur Şiş Köfte
Begin by tasting the köfte alone, then with bread, to notice the meat’s texture and the balance of the bite. Give the dish an experience of its own; place, recipe and serving style all contribute to its character.
Ask about skewer count or portion weight and which bread and salads accompany it. If the family wants several dishes, begin with defined portions to share, adding later. Plenty of bread does not establish the quantity of meat, and a close-up photograph does not reveal actual size.
Ceviz Ezmesi is a local walnut sweet combining walnuts, semolina and sugar, spread out and cut into small pieces. It is different from walnut butter in a jar. Texture and the prominence of walnut or semolina may vary, so choose by more than the box’s appearance.
Ask to taste a piece. Can you recognise the walnut flavour? Does the sweetness suit you? Will the texture suit the person receiving the gift? These questions are simpler and more useful than seeking the most decorated box.
For travel, ask about production date, shelf life and suitable transport. Request ingredients, particularly if there is a nut allergy. With coffee, begin with one small piece before deciding on more: a local sweet is not necessarily low in sugar because it contains walnuts.

This is a map of provincial flavours, not a one-day instruction to visit them all. You could choose just two areas according to where you are staying.
Look for cheese pide or available pastries, asking which cheese is used. “With cheese” does not automatically exclude other additions; if vegetarian ingredients and preparation matter to you, check them.
Pastries such as Gazel Böreği feature in local culinary presentations and are worth asking a bakery about, without assuming availability everywhere. A café break need not involve a complete breakfast: tea and a small pastry, or coffee with ceviz ezmesi, may better suit a visit you will soon continue.
Çörek Otu Kahvesi, whose name refers to nigella or black cumin, is listed among Gölhisar’s flavours, with a distinctive local preparation and serving style. If it appears on the menu, ask about ingredients and preparation. Do not expect every café in central Burdur to offer it, or its name to guarantee the usual Turkish-coffee flavour.
Gazel Böreği among the area’s pastries
Ask the owner which local speciality they offer today that rarely appears on a general café menu. A simple drink or pastry recommendation may make the stop more enjoyable than your usual choice.
At Salda, check the restaurant’s actual location relative to your entrance and parking. “Near the lake” can cover a broad area. Ask about shade, facilities, pushchair space and a quiet table. Compare more than the price of a central restaurant and one near a visitor attraction: dish size, service and your route all matter.
On a day in the centre, try şiş followed by coffee and a small sweet. On a Salda day, choose Yeşilova toast or a meal suited to your schedule. Add Gölhisar kavurması only as part of a separate route. Avoid spending the day on the road collecting dish names. A memorable visit combines a flavour you understand, a setting where you can rest and a gift chosen after tasting.
